Yummy and Healthy :)

Easy 10 minute meal for college students and busy moms!!!! Lemon pepper chicken breast with steamed veggies!!!

No more excuses about being too busy to eat healthy -_-

Season the chicken with anything you want (I make my own marinade using lemon juice and pepper),
Cook the chicken on a George foreman grill for 6-8 minutes.
If you don't have a steamer here is an easy way to steam you veggies...
Put about an inch of water in a pot and bring to a simmer, place your veggies in the pot and cover.. check every few minutes until desired texture is reached (I dont' like my veggies fully steamed)...
This meal takes about 10 minutes or less to prepare.

Tip: Make several servings of this meal and keep them in seperate containers. Each day just grab one as you're heading out the door.. NO MORE MCDONALDS!!!!


Breakfast Pizza!!!!!

Make an ordinary omlet using as many eggs or egg whites you would normally use (do not fold),
Once cooked put it on a plate and top with calorie free ketsup,
Get all your favorite pizza toppings and and throw them in a pan coated with PAM, cook for a few minutes,
Throw the toppings on your pizza!!!
Top with low fat cheese if desired! If you season you topings try Mrs. Dash (any flavor).. If you use salt in your omelet try to use sea salt..
2 large eggs - 180 calories,
Topings- 35 calories



Huevos rancheros with home made sweet potato hashbrowns and turkey bacon!!!!

Cook your eggs in pam to save 100-300 calories..
Fry your hash browns in pam also (cooking time varies depending on how crunchy you want it)
Use low sodium/fat turkey bacon.. cooked on a george foreman grill to drain excess sodium and fat..
If you don't know how to make salsa then you can substitute it with store bought!!
1/4 cut sweet potato hash browns - 20 calories,
Two strips turkey bacon - 70 calories,
Two large eggs - 180 calories,
Salsa- 25 calories..
Season with sea salt and pepper.... Enjoy!!!



This is an easy green smoothie I made today.. If it's too "veggie" tasting for you then just add more fruit or a packet of stevia...
1 cup water (more if you like a thin smoothie)
1 whole carrot,
2 cups of organic baby spinach,
2 table spoons of flax seed,
1/4 cup of cherry tomatoes,
2 cups of frozen strawberries,
1 medium frozen banana,
Optional: 1/2 scoop whey protein
Blend and enjoy :)



Healthy buffalo wings!!!

Cut a chicken breast in strips..
Smother it in a hot sauce of your choice (I use Franks red hot)..
Coat the strips with oat powder (blend oat meal into a fine powder)
Pre-heat the oven to 400 degrees!!!
Place the wings in a dish and bake for 15 minutes..
After 15 minutes take the wings out and turn them over.. then place back in the oven for about 20 more minutes..
Once cooked, take the wings out and top with the same hot sauce you used before!!
Serve alolne for a snack or make a meal out of it and add a side of brown rice and a spinach salad!!
For kids you can use bbq sause instead of hot sauce.
